Sticky BBQ Glazed Tofu

Instructions

Prepare Tofu

35-40 minutes

Drain excess fluid from tofu package. Next, using a tofu press further remove moisture and pat away any excess moisture using a cloth

Slice tofu into quarter inch pieces. Add tofu to pan heat each side on low for five minutes. Oil is not necessary but can help prevent the tofu from sticking to the pan

Allow tofu to cool for 5-10 minutes

Air fry on 400 F for 8 minutes each side

Set aside to cool. It is important to allow the slices to cool so that they do not crumble in the next step

Dice slices into cubes

Add 1/2 c tomato sauce and season to taste with salt. Gently toss

Air fry 400 F for 15 minutes. This may vary depending on the air fryer

Check every 10 minutes until tofu reaches desired texture or chewiness. Note: Tofu (pressed) well in advance, should take less time to cook, hence why a tofu press will come in handy.

Cool down and set aside

Sauce

3 - 5 minutes

1 tbsp lemon juice

Pinch cayenne, black pepper, garlic powder, and turmeric

1 tsp apple cider vinegar

4 tbsp Mr. Rays BBQ sauce

2 tbsp ketchup

Season to taste with salt

Steamed Veggies (Optional)

5-10 minutes

Steam red pepper and onion by preparing a pan with a few ounces of water (1-3 fl oz) and steaming veggies until desired tenderness

Season to taste with salt

Marinate tofu

Typically, I pair it with a bed of jasmine rice or quinoa. Enjoy!
